Wrap Quiche

Feel like a quiche but don't want the butter-laden crust? Make a wrap quiche, and fill it with all your favourite veg.

Ingredients

1 reduced-carb wrap
3 eggs
50 g smoked chicken

Your favourite free veg:
Peppers
Tomatoes
Mushrooms
Asparagus
Broccoli

15 g cheese
1 TBS fresh herbs

Method

  1. Place the wrap into a cake pan or circular dish so that there is a bit of a lip/crust edge.

  2. Whisk the eggs and season with salt and pepper.

  3. Slice up the chicken and veg, and sprinkle it into the egg.

  4. Grate the cheese and sprinkle that on top, then garnish with whatever fresh herbs you enjoy.

  5. Bake for 10 - 15 minutes until the egg has set. Serve with a side salad if you want to.

Tips/Notes
You can swap the smoked chicken for a second portion of cheese.

If you can only find regular wraps, drop the smoked chicken.
