Simple Tuna Salad

A tuna salad doesn't have to be just lettuce and tomato. Take it up a level with pickled onions.

Ingredients

40 g pasta

1/2 cup lettuce

3 snacking peppers

5 cherry tomatoes

1/4 cucumber

1/4 avo

130 g tuna

2 TBS pickled onions

1 TBS olive oil
2 TBS apple cider vinegar
1/2 tsp mixed herbs
1/4 tsp garlic flakes
1/2 tsp honey
1/2 tsp mustard

Method

  1. Cook the pasta according to the package instructions, then leave it to cool.

  2. Shred the lettuce, dice the peppers, halve the tomatoes and slice the cucumber.

  3. Slice the avo.

  4. Drain the tuna.

  5. Prepare the dressing by placing all the ingredients in a jar and shaking them until combined. Season with salt and pepper to your taste.

  6. Assemble the tuna salad by combining the pasta, veg, tuna and avo in a bowl.

  7. Top with the pink pickled onions, and one final crack of black pepper. Pour over the dressing.

  8. Enjoy!

Tips/Notes
If you still need to make the pickled onions, thinly slice 1 red onion and put it in a jar. Add a pinch of salt and then cover the onion with red wine vinegar. Leave the onion to pickle, flipping the jar over every 10 minutes or so. Store in the fridge.

Make this salad in bulk so you have a few lunches prepared.
