Strawberry Bliss Balls

Ingredients

250 g strawberries
150 g oats
140 g sunflower seeds
1 TBS maple syrup
1 tsp vanilla essence
50 g desiccated coconut

To serve:
3 TBS desiccated coconut

Method

  1. Rinse the strawberries and cut the stalk off.

  2. Add all the ingredients to a food processor and whiz until you form a rough dough.

  3. With wet hands, use a dessert spoon to scoop up some dough, then roll it into balls.

  4. Place the bowls, one by one, into a bowl with the remaining coconut and roll them around to coat.

  5. Refrigerate for 2 hours before serving.

Tips/Notes
Store in the freezer for up to 3 months.

Swap the sunflower seeds for almonds.

Swap the syrup for honey.
