Steak & Watermelon Salad

Ingredients

100 g corn

10 g pumpkin seeds

200 g watermelon
40 g mixed baby leaves
30 g feta
5 g fresh mint
200 g cucumber
20 ml balsamic vinegar

280 g sirloin steak

Method

  1. Get a pan onto medium-high eat and spritz with cooking spray. Fry the corn until charred - don’t stir it too often. Remove from the pan and set it aside.

  2. Add the pumpkin seeds to the pan and lightly toast them until they crackle and pop. Set them aside.

  3. Cube the watermelon and the feta. Rinse the leaves and the mint. Roughly chop the mint. Slice the cucumber into thin matchsticks. Season with salt and pepper. Toss it all together in the balsamic vinegar.

  4. Get the pan onto medium-high heat again and add a drizzle of oil. Sear the steak for 3 - 5 minutes per side, seasoning with salt and pepper. Set it aside to rest for 5 minutes.

  5. Toss the corn through the salad. Thinly slice the steak and arrange it on top. Sprinkle with pumpkin seeds. Enjoy!

Tips/Notes
Swap the sirloin for rump

Swap the pumpkin seeds for sunflower seeds
