Pumpkin & Sage Hummus

Rich pumpkin flavour, packed with plant protein and fibre - make this homemade hummus to boost your salads, sandwiches and snacks.

Ingredients

2 cloves garlic
12 fresh sage leaves
10 ml olive oil
1 cup roasted pumpkin
1 tin chickpeas
1 tsp cumin
1 tsp smoked paprika
3 TBS lemon juice
20 ml olive oil
1 tsp salt
50 g tahini

Method

  1. Crush the garlic and fry it with the sage in the olive oil until crisp.

  2. Add it to a blender together with the remaining ingredients.

  3. Blend until smooth, adding a splash of water if needed, then taste and adjust with more lemon or salt if needed.

  4. Garnish with pumpkin seeds if serving as a dip, otherwise store in the fridge until needed.

Tips/Notes
You can add some chilli powder if you like.
