Chickpea Fudge

Ingredients

12 fresh dates
400 g canned chickpeas
120 g peanut butter
1 tsp vanilla essence
1 pinch salt
80 g dark chocolate

Method

  1. Pit the dates, then cover in boiling water for 10 minutes.

  2. Drain the water (but keep it), and add the dates to a blender. Add the chickpeas, peanut butter, vanilla essence and salt, and blend until smooth.

  3. If the mixture is too thick, add a few teaspoons of date water. The mixture should resemble cookie dough.

  4. Line a square baking tray with baking paper. Spread the mixture evenly across the tray and freeze for 1 hour.

  5. Melt the chocolate in a pot over very low heat, until melted and smooth. Pour the chocolate over the chickpea fudge, then freeze again.

  6. Slice into 16 squares. Eat straight from the freezer.

Tips/Notes
Store in the freezer for up to 3 months.
